Following secondary fermentation, the wine sat on yeast lees for 2.5 years undergoing autolysis and imparting to the wine lovely biscuity and chocolatey flavours. It’s a methode champenoisé treat for extra special people/occasions. | FOOD SUGGESTIONS: Sparkling Shiraz is uniquely Australian.
